White Yams and Ndolé

Ndolé and Calabar Yam
White yams commonly called in at home calabar yams are  perennial herbaceous vines cultivated for the consumption of their starchy tubers. when cooked, yams have an earthy, hardy taste and usually a minimal amount of sweetness (Source:calabar yams) Its earthly nature makes it perfect with Ndolé. Ndolé consists of a stew of groundnuts, ndolé leaves or bitter leaves, and fish or smoked beef. The dish may also contain shrimps or prawns, which is the most important source of taste in this dish.
